The one thing I love more than caking and baking alone is bringing people together over food. Whether it be just for fun or celebrating something special, I love how people can gather around food. Jenna of A Savory Feast recently welcomed a baby boy into her family, so today a few blog friends and I are throwing her a virtual baby shower! I made Mini Summer Layered Trifles that are reminiscent of the beach, since she is a Florida girl!
Summer can make it hard to put together a dessert that will not melt. I also don’t want to spend all of my time in a hot kitchen when I could be out with friends. These Mini Summer Layered Trifles are super easy to put together and will be a huge hit at your party. You can get all of the layers ready ahead of time and then assemble when you are going to serve them.
Each of the layers in thie Mini Summer Layered Trifles remind me of the beach. The toasted coconut on the bottom of the jars looks like the broken shells you often find at the edge of the water at the beach. The vanilla pudding is reminiscent of the soft warm sand after a sunny day. The blue topping is sure to remind you of the beautiful blue waves washing up to the shore.
- Golden Oreos (Smashed)
- Vanilla Pudding
- Toasted Coconut Flakes
- Cool Whip
- Blue Food Coloring
- Assemble Vanilla pudding per box instructions or save yourself time and use the Jell-O pudding packs. You will need at least 1 per two jars
- Toast the Coconut Flakes at 425 degrees for 1-2 minutes in the oven. It can burn quick so keep an eye on it.
- Smash about 8 Golden Oreos, into smaller pieces, just enough so you can still tell its an Oreo.
- Mix in 2-4 drops of blue food coloring into the Cool Whip.
- Layer Dessert! I layered as follows: Coconut, Pudding, Oreos, Pudding, Cool Whip, Coconut
